1 1/4 cups caster sugar
3/4 teaspoon vanilla extract
1/2 teaspoon salt
3 large free-range eggs
1/3 cup buttermilk
1 3/4 cups sifted pure icing sugar
5 teaspoons lime zest
7 teaspoons lime juice (see tip)
